Pizza Screen
To produce great pizzeria-style crust at home we recommend using our pizza screen—well browned, crisp, and just a bit chewy— the idea is to preserve the effect of cooking pizza in a blasting hot wood-fired pizza oven, we recommend using a pizza screen.
We do not cook the pizza on the screen, but rather we recommend placing the screen on the pizza tray and taking the finished pizza right to the screen to rest for 30 – 60 seconds. This will allow the steam to escape without being trapped under the dough, contributing to a nice semi-crisp crust.
