To produce great pizzeria-style crust at home we recommend using our pizza screen—well browned, crisp, and just a bit chewy— the idea is to preserve the effect of cooking pizza in blasting hot wood fired pizza oven, that said we recommend using a pizza screen. We do not cook the pizza on the screen , but rather we recommend placing the screen on the pizza tray and taking finished pizza right to the screen to rest for 30 – 60 seconds. This will allow the steam to escape without being trapped under the dough, contributing to a nice semi crisp crust.
