We test a lot of products for the wood fired oven, and not all of them will perform and live up to or standards. This Pan is WORTHY!!
On a typical afternoon of cooking here at Wildwood we bake a lot of pizzas and tons of wood fired veggie Tapas. At the end of the day there is so much stored heat in the oven, it would be a shame to let it go to waste. So why not slow braise a roast Lamb Shoulder, or bunch of Oxtails with the retained heat? Overnight cooking is great. We like to sear the meats in a little oil, them add some aromatics and stock then seal the lid tight and forget about it!.
The following morning you will awake to something delicious that took little effort to prepare. The large size of our Braising Pan will accommodate several legs of lamb or lamb shanks , and full size pork shoulders as well. If you want to make the most delicious pulled pork in your wood fired pizza oven you want this pan. We have been testing this for over 10 years and it still looks great! This pan is something you will pass down to future generations of cooks.
Of course you do not have to do overnight slow cooking or braising to enjoy this pan. This pan is great as a roaster and the high sides make saute work a breeze. The large capacity will let you cook enough food to feed any large gathering.
