While not everyone loves to cook, many people are quite passionate about the process and none more so than Michael Gerard, the chef de cuisine/owner of Wildwood Ovens. Now, burgeoning chefs can learn the cooking basics and the intricacies of cooking in a wood-fired oven under Chef Michael’s tutelage at the Wildwood Oven’s test kitchen. The chef offers four different courses:
Tapas Workshop 6 Hr
Everyone knows the wood-fired oven will produce the best pizza you have ever tasted, but this is just scratching the surface of what the wood-fired ovens can do. Join Chef and oven maker Michael Gerard from Wildwood Ovens as he demonstrates how to prepare numerous tapas using time-honored culinary technique’s like baking in ashes from the fire, salt crust cooking, Tuscan grilling, using the stone plancha, cooking on wood cedar plank, skillet pan searing, oven roasting, and flambé are all part of Michael’s arsenal. $140
Brazilian BBQ Workshop 6 Hr
Learn how to select the best meats for BBQ and how to trim, season and properly skewer them. You will learn Brazilian classics, Picanha, Rack of Lamb (Carneiro) Contra Filet, Costela (Beef Rib), Parmesan-crusted pork tenderloin, and Chicken breast wrapped in Bacon. Fusion favorites include Tokyo BBQ, North African BBQ favorites, and our take on Korean BBQ. We cover topics such as fire control, proper temperatures, marinades, dry rubs, and brines. All our meats are pasture-raised, and prepared using only the finest ingredients. $195
The Pizza Workshop 6 Hr
The secret to great pizza is great dough, and we have it! Learn how to make our famous “slow” dough 3-day-retarded recipe. The second most important ingredient is the sauce. Experience Italian plum tomatoes, fresh herbs and olive oil simmered in the wood oven. Toppings are seasonal and lean more to fresh organic vegetables fire roasted to perfection, but we do love our calabresi, sopressata, and sausages. This is a hands-on class. $165
A Seasonal Feast 6 Hr
Learn how to cook your whole meal in the wood-fired oven. The secret to pulling off a holiday feast without breaking a sweat is this class. Learn how professional kitchens make it happen. We will delve into sous vide, pre-prep, and overnight slow cooking. A typical seasonal meal feast consists of roasted Prime Rib with Yorkshire pudding, Roast duck a la Orange, Porchetta, leg of lamb, Turkey, and Brisket. All main courses are paired with seasonal and complementing vegetable sides. We cover Holiday themes, New Year’s, Christmas, Thanksgiving, Easter, and more.
